Kabab (bor Beef And Vegetable Skewers)
Kabab, also known as Bor Beef and Vegetable Skewers, is a popular dish in South Sudanese cuisine. This recipe combines marinated beef and a variety of vegetables, grilled to perfection on skewers.
Ingredients
- 1 lb beef, cut into cubes
- 1 onion, cut into chunks
- 1 bell pepper, cut into chunks
- 1 zucchini, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a bowl, mix the olive oil, lemon juice, garlic, paprika, cumin, salt, and pepper to create the marinade.
- Add the beef cubes to the marinade, cover, and refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread the marinated beef, onion, bell pepper, and zucchini onto skewers.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender.
- Serve the kabab hot with rice or flatbread.
