Kabab Hindi (grilled Spiced Lamb Skewers With Mint Chutney)

Ingredients

  • 1 lb lamb, cut into 1-inch cubes
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1/2 tsp turmeric
  • Salt to taste
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1 green chili, chopped
  • 1/4 cup plain yogurt
  • 1 tbsp lemon juice
  • Salt to taste
  • 8 bamboo skewers, soaked in water

Instructions

  1. In a bowl, combine the lamb, onion, garlic, cumin, coriander, cayenne pepper, turmeric, and salt. Mix well and let it marinate for 30 minutes.
  2. Thread the marinated lamb onto the soaked bamboo skewers.
  3. Preheat the grill to medium-high heat. Grill the skewers for 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  4. Meanwhile, prepare the mint chutney by blending the mint leaves, cilantro, green chili, yogurt, lemon juice, and salt in a food processor until smooth.
  5. Serve the grilled lamb skewers with the mint chutney on the side.
