Ingredients

  • 1 large eggplant, cut into chunks
  • 2 zucchinis, sliced
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 8 wooden skewers, soaked in water
  • 1/2 cup tahini
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 3 tablespoons lemon juice
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, toss the eggplant, zucchinis, bell peppers, and red onion with olive oil, salt, and pepper.
  3. Thread the marinated vegetables onto the soaked skewers.
