Ingredients

  • 4 medium zucchinis
  • 1/2 lb ground beef
  • 1/2 cup rice
  • 1 onion, finely chopped
  • 2 tomatoes, grated
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 2 cups beef or vegetable broth
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Trim the ends of the zucchinis and cut them in half lengthwise. Scoop out the flesh, leaving about 1/4 inch shell. Chop the scooped zucchini flesh and set aside.
  3. In a large bowl, combine the ground beef, rice, chopped onion, grated tomatoes, chopped parsley, chopped dill, salt, black pepper, and paprika. Mix well.
  4. Stuff the hollowed zucchinis with the beef and rice mixture.
  5. Place the stuffed zucchinis in a deep pot. Pour the beef or vegetable broth over the zucchinis and drizzle with olive oil.
  6. Cover the pot and cook over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
  7. Serve the Kabak Dolmasi hot, garnished with additional fresh herbs if desired.
