Kabak Dolmasi (stuffed Zucchini With Beef And Rice)

Ingredients
- 4 medium zucchinis
- 1/2 lb ground beef
- 1/2 cup rice
- 1 onion, finely chopped
- 2 tomatoes, grated
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 2 cups beef or vegetable broth
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Trim the ends of the zucchinis and cut them in half lengthwise. Scoop out the flesh, leaving about 1/4 inch shell. Chop the scooped zucchini flesh and set aside.
- In a large bowl, combine the ground beef, rice, chopped onion, grated tomatoes, chopped parsley, chopped dill, salt, black pepper, and paprika. Mix well.
- Stuff the hollowed zucchinis with the beef and rice mixture.
- Place the stuffed zucchinis in a deep pot. Pour the beef or vegetable broth over the zucchinis and drizzle with olive oil.
- Cover the pot and cook over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
- Serve the Kabak Dolmasi hot, garnished with additional fresh herbs if desired.
