Kabak Dolmasi (stuffed Zucchini With Lamb And Rice)

Ingredients
- 4 medium zucchinis
- 1/2 lb ground lamb
- 1 cup rice
- 1 onion, finely chopped
- 2 tomatoes, grated
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the zucchinis and scoop out the flesh, leaving about 1/4 inch thick shell. Chop the zucchini flesh and set aside.
- In a large bowl, combine the ground lamb, rice, chopped onion, grated tomatoes, chopped parsley, chopped dill, paprika, cumin, salt, and pepper. Mix well.
- Stuff the hollowed zucchinis with the lamb and rice mixture.
- Place the stuffed zucchinis in a deep pot. Add the chopped zucchini flesh around the zucchinis.
- Pour the chicken or vegetable broth over the zucchinis. Drizzle with olive oil.
- Cover the pot and cook over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
- Serve the kabak dolmasi hot, garnished with additional fresh herbs if desired.
