Kabak Dolmasi (stuffed Zucchini With Lamb And Rice)

Ingredients

  • 4 medium zucchinis
  • 1/2 lb ground lamb
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 tomatoes, grated
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and scoop out the flesh, leaving about 1/4 inch thick shell. Chop the zucchini flesh and set aside.
  3. In a large bowl, combine the ground lamb, rice, chopped onion, grated tomatoes, chopped parsley, chopped dill, paprika, cumin, salt, and pepper. Mix well.
  4. Stuff the hollowed zucchinis with the lamb and rice mixture.
  5. Place the stuffed zucchinis in a deep pot. Add the chopped zucchini flesh around the zucchinis.
  6. Pour the chicken or vegetable broth over the zucchinis. Drizzle with olive oil.
  7. Cover the pot and cook over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
  8. Serve the kabak dolmasi hot, garnished with additional fresh herbs if desired.
