Kabob (fragrant Herb-stuffed Fish)

Ingredients

  • 4 whole fish, cleaned and gutted
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh dill, chopped
  • 1 cup fresh parsley, chopped
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • Salt and pepper to taste
  • 4 tablespoons olive oil

Instructions

  1. Preheat the grill to medium heat.
  2. In a bowl, mix together the chopped cilantro, dill, parsley, onion, garlic, salt, and pepper.
  3. Stuff each fish with the herb mixture and a few slices of lemon.
  4. Brush the fish with olive oil and season with additional salt and pepper.
  5. Grill the fish for about 10-12 minutes on each side, or until the fish is cooked through and has a nice char.
  6. Remove from the grill and let it rest for a few minutes before serving.
