Kabsa Biryani (saudi Arabian Chicken Biryani)

Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 large onion, thinly sliced
- 4 tomatoes, chopped
- 4 cloves garlic, minced
- 2 tbsp Kabsa spice mix
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the Kabsa spice mix and minced garlic, and cook for 2 minutes.
- Add the chopped tomatoes, raisins, and slivered almonds to the pot, and cook for another 5 minutes.
- Wash the basmati rice and add it to the pot. Stir to combine with the chicken and spices.
- Pour in the chicken broth and season with salt. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the biryani with a fork and serve hot.
