Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups basmati rice
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 tablespoons tomato paste
  • 2 tablespoons Kabsa spice mix
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 4 cups chicken broth
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onions and cook until softened.
  2. Add the minced garlic and cook for another minute.
  3. Add the chicken pieces to the pot and brown them on all sides.
  4. Stir in the Kabsa spice mix, turmeric, cinnamon, cardamom, and cloves, coating the chicken evenly with the spices.
  5. Add the diced tomatoes, tomato paste, and chicken broth. Bring to a simmer and let it cook for 30 minutes.
  6. Stir in the basmati rice, raisins, and slivered almonds. Season with salt and pepper.
  7. Cover the pot and let it simmer for another 20-25 minutes, or until the rice is cooked and the chicken is tender.
  8. Garnish with fresh cilantro before serving.
