Kabsa (omani Spiced Chicken And Rice Casserole)
Kabsa is a traditional Omani spiced chicken and rice casserole that is bursting with flavor. This aromatic dish is a staple in Omani cuisine and is perfect for a hearty family meal or special occasions.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups basmati rice
- 1 large onion, finely chopped
- 4 tomatoes, diced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 3 tbsp Kabsa spice mix
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 4 cups chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until they are soft and translucent.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the Kabsa spice mix, garlic, and tomato paste, and cook for 2 minutes.
- Add the diced tomatoes, raisins, and almonds to the pot, and stir to combine.
- Pour in the chicken broth and bring the mixture to a boil.
- Stir in the basmati rice, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Season with salt and pepper to taste.
- Once done, fluff the rice with a fork and serve the Kabsa hot.
