Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups basmati rice
  • 1 large onion, finely chopped
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 3 tbsp Kabsa spice mix
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 4 cups chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and cook until they are soft and translucent.
  2. Add the chicken pieces to the pot and brown them on all sides.
  3. Stir in the Kabsa spice mix, garlic, and tomato paste, and cook for 2 minutes.
  4. Add the diced tomatoes, raisins, and almonds to the pot, and stir to combine.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Stir in the basmati rice, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the rice is cooked and the chicken is tender.
  7. Season with salt and pepper to taste.
  8. Once done, fluff the rice with a fork and serve the Kabsa hot.
