Kabsa (spiced Rice With Chicken)

Ingredients
- 2 cups basmati rice
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 4 tomatoes, diced
- 4 cloves garlic, minced
- 3 tablespoons Kabsa spice mix
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 4 cups chicken broth
- Salt to taste
- Black pepper to taste
- 3 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the Kabsa spice mix, salt, and black pepper, then add the diced tomatoes and cook for a few minutes.
- Add the basmati rice to the pot and stir to coat the grains with the spice mixture.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes.
- Stir in the raisins and almonds, then cover and continue to cook for another 10 minutes, or until the rice is tender and the chicken is cooked through.
- Fluff the rice with a fork and serve the Kabsa hot.
