Kabsa (spiced Rice With Chicken)

Ingredients

  • 2 cups basmati rice
  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 3 tablespoons Kabsa spice mix
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 4 cups chicken broth
  • Salt to taste
  • Black pepper to taste
  • 3 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the chicken pieces to the pot and brown on all sides.
  3. Stir in the Kabsa spice mix, salt, and black pepper, then add the diced tomatoes and cook for a few minutes.
  4. Add the basmati rice to the pot and stir to coat the grains with the spice mixture.
  5. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes.
  6. Stir in the raisins and almonds, then cover and continue to cook for another 10 minutes, or until the rice is tender and the chicken is cooked through.
  7. Fluff the rice with a fork and serve the Kabsa hot.
