Kabsa (spiced Rice With Lamb And Dried Lime)
Kabsa is a traditional dish from Kuwaiti cuisine, featuring spiced rice with tender lamb and the distinct flavor of dried lime. This aromatic and flavorful dish is a staple at gatherings and celebrations in Kuwait.
Ingredients
- 2 cups basmati rice
- 500g lamb, cut into chunks
- 1 large onion, finely chopped
- 4 dried limes (loomi)
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 2 tablespoons kabsa spice mix
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 4 cups chicken broth
- Salt to taste
- Black pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the lamb chunks to the pot and brown them on all sides.
- Stir in the kabsa spice mix, minced garlic, and diced tomatoes. Cook for a few minutes until the tomatoes break down.
- Add the basmati rice to the pot and stir to coat the grains with the flavorful mixture.
- Poke the dried limes with a fork and add them to the pot, then pour in the chicken broth. Season with salt and black pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
- While the rice is cooking, in a small pan, toast the slivered almonds until golden and set aside. In the same pan, lightly toast the raisins.
- Once the rice is cooked, fluff it with a fork and transfer it to a serving platter. Arrange the lamb chunks on top and sprinkle with the toasted almonds and raisins.
