Kabsa (spiced Rice With Lamb And Dried Lime)

Ingredients

  • 2 cups basmati rice
  • 500g lamb, cut into chunks
  • 1 large onion, finely chopped
  • 4 dried limes (loomi)
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tablespoons kabsa spice mix
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 4 cups chicken broth
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the lamb chunks to the pot and brown them on all sides.
  3. Stir in the kabsa spice mix, minced garlic, and diced tomatoes. Cook for a few minutes until the tomatoes break down.
  4. Add the basmati rice to the pot and stir to coat the grains with the flavorful mixture.
  5. Poke the dried limes with a fork and add them to the pot, then pour in the chicken broth. Season with salt and black pepper.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes until the rice is tender and the liquid is absorbed.
  7. While the rice is cooking, in a small pan, toast the slivered almonds until golden and set aside. In the same pan, lightly toast the raisins.
  8. Once the rice is cooked, fluff it with a fork and transfer it to a serving platter. Arrange the lamb chunks on top and sprinkle with the toasted almonds and raisins.
