Kabsa (stuffed Camel Hump)
Kabsa is a traditional Emirati dish that is typically made with rice, meat, and a blend of aromatic spices. In this unique recipe, we will be preparing a Kabsa with a twist - a stuffed camel hump!
Ingredients
- 1 whole camel hump
- 5 cups basmati rice
- 2 onions, chopped
- 4 tomatoes, diced
- 1/2 cup raisins
- 1/2 cup slivered almonds
- 1/4 cup ghee
- 4 cloves garlic, minced
- 2 cinnamon sticks
- 5 cardamom pods
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cloves
- Salt to taste
- Water
Instructions
- Preheat the oven to 350°F (175°C).
- Clean the camel hump and remove any excess fat. Season with salt and place it in a roasting pan.
- In a large bowl, mix together the rice, onions, tomatoes, raisins, almonds, ghee, garlic, and spices. Stuff this mixture into the cavity of the camel hump.
- Add water to the roasting pan until it reaches about 1 inch up the sides of the hump. Cover the pan with foil.
- Roast the stuffed camel hump in the preheated oven for 4 hours, or until the internal temperature reaches 160°F (70°C).
- Remove the foil and continue roasting for an additional 30 minutes to brown the rice.
- Once cooked, carefully transfer the stuffed camel hump to a serving platter and carve into slices, serving the flavorful rice stuffing alongside.
