Kabsa is a traditional Emirati dish that is typically made with rice, meat, and a blend of aromatic spices. In this unique recipe, we will be preparing a Kabsa with a twist - a stuffed camel hump!

Kabsa (stuffed Camel Hump)

Ingredients

  • 1 whole camel hump
  • 5 cups basmati rice
  • 2 onions, chopped
  • 4 tomatoes, diced
  • 1/2 cup raisins
  • 1/2 cup slivered almonds
  • 1/4 cup ghee
  • 4 cloves garlic, minced
  • 2 cinnamon sticks
  • 5 cardamom pods
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cloves
  • Salt to taste
  • Water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Clean the camel hump and remove any excess fat. Season with salt and place it in a roasting pan.
  3. In a large bowl, mix together the rice, onions, tomatoes, raisins, almonds, ghee, garlic, and spices. Stuff this mixture into the cavity of the camel hump.
  4. Add water to the roasting pan until it reaches about 1 inch up the sides of the hump. Cover the pan with foil.
  5. Roast the stuffed camel hump in the preheated oven for 4 hours, or until the internal temperature reaches 160°F (70°C).
  6. Remove the foil and continue roasting for an additional 30 minutes to brown the rice.
  7. Once cooked, carefully transfer the stuffed camel hump to a serving platter and carve into slices, serving the flavorful rice stuffing alongside.
