Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 3 tbsp Kabsa spice mix
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the lamb chunks to the pot and brown on all sides.
  3. Stir in the Kabsa spice mix and season with salt and pepper.
  4. Add the diced tomatoes, raisins, and slivered almonds to the pot, and cook for a few minutes.
  5. Pour in the chicken broth and bring to a boil. Then, reduce the heat, cover, and simmer for 45 minutes.
  6. Stir in the basmati rice, cover, and cook for an additional 15 minutes, or until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork and serve the Kabsa hot.
