Kabsa (syrian Lamb And Rice Pilaf)
Kabsa is a traditional Syrian dish that features tender lamb and fragrant rice, infused with a blend of aromatic spices. This hearty and flavorful meal is perfect for special occasions or family gatherings.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 cups basmati rice
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 3 tbsp Kabsa spice mix
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the lamb chunks to the pot and brown on all sides.
- Stir in the Kabsa spice mix and season with salt and pepper.
- Add the diced tomatoes, raisins, and slivered almonds to the pot, and cook for a few minutes.
- Pour in the chicken broth and bring to a boil. Then, reduce the heat, cover, and simmer for 45 minutes.
- Stir in the basmati rice, cover, and cook for an additional 15 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and serve the Kabsa hot.
