Kabuli Pulao (kabuli Pilaf)
Kabuli Pulao, also known as Kabuli Pilaf, is a traditional Afghan rice dish that is packed with flavor and aromatic spices. This dish is often served at special occasions and gatherings, making it a staple in Pashtun cuisine.
Ingredients
- 2 cups basmati rice
- 1/4 cup vegetable oil
- 1 large onion, thinly sliced
- 1 pound lamb or beef, cut into cubes
- 1/2 cup raisins
- 1/4 cup slivered carrots
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 4 cups chicken or beef broth
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown. Remove half of the onions and set aside for garnish.
- Add the meat to the pot with the remaining onions and cook until browned.
- Stir in the raisins, slivered carrots, and spices. Cook for a few minutes until fragrant.
- Add the rice to the pot and stir to combine with the meat and spices.
- Pour in the broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and transfer to a serving platter. Garnish with the reserved caramelized onions.
