Kabuli Pulao (kabuli Pilaf)

Kabuli Pulao (kabuli Pilaf)

Ingredients

  • 2 cups basmati rice
  • 1/4 cup vegetable oil
  • 1 large onion, thinly sliced
  • 1 pound lamb or beef, cut into cubes
  • 1/2 cup raisins
  • 1/4 cup slivered carrots
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 cups chicken or beef broth

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown. Remove half of the onions and set aside for garnish.
  2. Add the meat to the pot with the remaining onions and cook until browned.
  3. Stir in the raisins, slivered carrots, and spices. Cook for a few minutes until fragrant.
  4. Add the rice to the pot and stir to combine with the meat and spices.
  5. Pour in the broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork and transfer to a serving platter. Garnish with the reserved caramelized onions.
