Ingredients

  • 4 pav (Indian dinner rolls)
  • 4 medium potatoes, boiled and mashed
  • 1/2 cup roasted peanuts, coarsely ground
  • 1/4 cup dabeli masala
  • 1/4 cup tamarind-date chutney
  • 1/4 cup garlic chutney
  • 1/2 cup pomegranate seeds
  • 1/2 cup finely chopped onions
  • 1/2 cup nylon sev (crunchy chickpea noodles)
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Heat oil in a pan and add the mashed potatoes along with dabeli masala and salt. Cook for 5 minutes.
  2. Slit the pav horizontally without cutting through and toast on a tawa with some butter.
  3. Spread garlic chutney on one side and tamarind-date chutney on the other side of the pav.
  4. Place a portion of the potato mixture on the pav and top it with chopped onions, pomegranate seeds, and ground peanuts.
  5. Sprinkle nylon sev on top and press the pav gently.
  6. Repeat with the remaining pav and serve hot.
