Kachkéisrösti (Cheese Rösti)
Cheese Rösti, also known as Kachkéisrösti, is a traditional dish from Luxembourgian cuisine. This hearty and comforting potato pancake is made with grated potatoes and melted cheese, creating a deliciously crispy and savory treat.
Ingredients
- 4 large potatoes, peeled and grated
- 1 cup grated Gruyère cheese
- 1 onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.
- In a large bowl, combine the grated potatoes, grated cheese, chopped onion, salt, and pepper.
- Heat 1 tablespoon of butter in a non-stick skillet over medium heat.
- Add the potato mixture to the skillet, pressing it down evenly to form a pancake. Cook for about 10-12 minutes until the bottom is golden and crispy.
- Place a large plate over the skillet and carefully flip the rösti onto the plate. Add the remaining butter to the skillet and slide the rösti back into the skillet to cook the other side for another 10-12 minutes.
- Once both sides are golden and crispy, remove the rösti from the skillet and cut into wedges. Serve hot and enjoy!
