Kacho (marshallese Style Beef Stew)

Ingredients
- 2 lbs beef stew meat, cubed
- 3 large potatoes, peeled and cubed
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup coconut milk
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until fragrant.
- Add the beef stew meat to the pot and brown on all sides.
- Pour in the beef broth and coconut milk. Bring to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.
- Add the potatoes, carrots, and soy sauce to the pot. Continue to simmer for an additional 30-45 minutes, or until the vegetables are tender and the meat is cooked through.
- Season with salt and pepper to taste. Serve hot and enjoy!
