Kacho is a traditional Marshallese dish that features a flavorful chicken and vegetable stir-fry. This dish is a staple in Marshallese cuisine and is loved for its vibrant colors and delicious flavors.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into strips
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 bell peppers, sliced
- 1 cup snap peas
- 4 cloves garlic, minced
- 1 teaspoon grated ginger
- Salt and pepper to taste
Instructions
- In a bowl, mix the chicken strips with soy sauce, oyster sauce, and cornstarch. Let it marinate for 10 minutes.
- Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add more oil if needed and sauté the onion, bell peppers, and snap peas until they are tender-crisp.
- Add the minced garlic and grated ginger to the skillet and stir-fry for another minute.
- Return the cooked chicken to the skillet and toss everything together. Season with salt and pepper to taste.
- Remove from heat and serve the Kacho hot with steamed rice.
