Kacho (marshallese Style Fried Rice)

Ingredients

  • 3 cups cooked rice
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup diced bell pepper
  • 1/2 cup diced ham
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add the diced onion, carrots, and bell pepper. Cook until the vegetables are tender.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until cooked through.
  4. Add the diced ham to the skillet and cook for 2-3 minutes.
  5. Add the cooked rice to the skillet and stir to combine with the vegetables and ham.
  6. Pour the soy sauce over the rice and stir to evenly distribute.
  7. Cook for an additional 5-7 minutes, stirring occasionally, until the rice is heated through.
  8. Season with salt and pepper to taste.
  9. Remove from heat and serve hot.
