Kacho (marshallese Style Fried Rice)
Kacho is a traditional Marshallese dish that is a flavorful and satisfying fried rice. This dish is a staple in Marshallese cuisine and is often enjoyed as a main course or as a side dish.
Ingredients
- 3 cups cooked rice
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1/2 cup diced bell pepper
- 1/2 cup diced ham
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add the diced onion, carrots, and bell pepper. Cook until the vegetables are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until cooked through.
- Add the diced ham to the skillet and cook for 2-3 minutes.
- Add the cooked rice to the skillet and stir to combine with the vegetables and ham.
- Pour the soy sauce over the rice and stir to evenly distribute.
- Cook for an additional 5-7 minutes, stirring occasionally, until the rice is heated through.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
