Kacho (marshallese Style Spicy Beef Noodles)

Ingredients
- 1 lb beef, thinly sliced
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp soy sauce
- 1 tbsp chili paste
- 8 oz rice noodles
- 4 cups beef broth
- 1 cup green onions, chopped
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the beef slices and cook until browned. Remove the beef from the pot and set aside.
- In the same pot, sauté the onion, garlic, and ginger until fragrant.
- Add the soy sauce and chili paste, then stir to combine.
- Pour in the beef broth and bring to a boil.
- Add the rice noodles and cook according to package instructions.
- Return the beef to the pot and simmer for 5 minutes.
- Stir in the green onions and remove from heat.
- Serve the Kacho hot and enjoy!
