Kachori (Deep-Fried Stuffed Bread)
Deep-Fried Stuffed Bread (Kachori) is a popular Jain Cuisine dish that is crispy on the outside and filled with a flavorful stuffing on the inside. It is a delicious snack that can be enjoyed with a cup of hot tea.
Ingredients
- 2 cups all-purpose flour
- 2 tbsp ghee (clarified butter)
- 1/2 tsp salt
- 1/2 cup moong dal (split yellow lentils), soaked
- 1/2 tsp cumin seeds
- 1/2 tsp fennel seeds
- 1/2 tsp ginger, grated
- 1/2 tsp green chili, finely chopped
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- Oil for deep frying
Instructions
- In a bowl, mix the all-purpose flour, ghee, and salt. Add water as needed to make a stiff dough. Cover and let it rest for 15 minutes.
- In a food processor, blend the soaked moong dal into a coarse mixture.
- Heat a pan and add cumin seeds, fennel seeds, ginger, and green chili. Sauté for a minute.
- Add the blended moong dal, turmeric powder, red chili powder, garam masala, and salt. Cook for 5-7 minutes. Let the mixture cool.
- Divide the dough into small balls. Roll out each ball into a small circle. Place a spoonful of the moong dal mixture in the center and seal the edges to form a stuffed ball.
- Heat oil in a deep pan. Deep fry the stuffed balls on medium heat until golden brown and crispy.
- Remove from the oil and drain on paper towels. Serve hot.
