Kachori (Deep-Fried Stuffed Bread)

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp ghee (clarified butter)
  • 1/2 tsp salt
  • 1/2 cup moong dal (split yellow lentils), soaked
  • 1/2 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp ginger, grated
  • 1/2 tsp green chili, finely chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Oil for deep frying

Instructions

  1. In a bowl, mix the all-purpose flour, ghee, and salt. Add water as needed to make a stiff dough. Cover and let it rest for 15 minutes.
  2. In a food processor, blend the soaked moong dal into a coarse mixture.
  3. Heat a pan and add cumin seeds, fennel seeds, ginger, and green chili. Sauté for a minute.
  4. Add the blended moong dal, turmeric powder, red chili powder, garam masala, and salt. Cook for 5-7 minutes. Let the mixture cool.
  5. Divide the dough into small balls. Roll out each ball into a small circle. Place a spoonful of the moong dal mixture in the center and seal the edges to form a stuffed ball.
  6. Heat oil in a deep pan. Deep fry the stuffed balls on medium heat until golden brown and crispy.
  7. Remove from the oil and drain on paper towels. Serve hot.
