Kaddo Bourani (afghan Pumpkin Stew)
Kaddo Bourani is a traditional Afghan dish made with sweet caramelized pumpkin, savory meat sauce, and tangy yogurt. It's a delightful combination of flavors and textures that makes it a favorite in Pashtun cuisine.
Ingredients
- 2 lbs pumpkin, peeled and cut into chunks
- 1/4 cup sugar
- 1/4 cup vegetable oil
- 1 lb ground beef or lamb
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup plain yogurt
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Place the pumpkin chunks in a baking dish and sprinkle with sugar. Drizzle with vegetable oil.
- Bake for 45-50 minutes, or until the pumpkin is tender and caramelized.
- While the pumpkin is baking, prepare the meat sauce. In a skillet, brown the ground beef or lamb with onion and garlic.
- Add the tomato sauce and simmer for 10 minutes. Season with salt and pepper.
- To serve, place the caramelized pumpkin on a serving platter, top with the meat sauce, and finish with a dollop of yogurt.
