Ingredients

  • 2 lbs pumpkin, peeled and cut into chunks
  • 1/4 cup sugar
  • 1/4 cup vegetable oil
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup plain yogurt
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Place the pumpkin chunks in a baking dish and sprinkle with sugar. Drizzle with vegetable oil.
  3. Bake for 45-50 minutes, or until the pumpkin is tender and caramelized.
  4. While the pumpkin is baking, prepare the meat sauce. In a skillet, brown the ground beef or lamb with onion and garlic.
  5. Add the tomato sauce and simmer for 10 minutes. Season with salt and pepper.
  6. To serve, place the caramelized pumpkin on a serving platter, top with the meat sauce, and finish with a dollop of yogurt.
