Ingredients
- 2 lbs pumpkin, peeled and cut into cubes
- 1 cup plain yogurt
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the pumpkin cubes to the skillet and cook for 5 minutes, stirring occasionally.
- Stir in the tomato sauce, turmeric, cinnamon, and cardamom. Season with salt and pepper.
- Cover the skillet and let the pumpkin simmer for 20-25 minutes, or until tender.
- In a separate bowl, whisk the yogurt until smooth.
- Spread the yogurt over the cooked pumpkin in the skillet.
- Cover and cook for an additional 10 minutes.
- Once the pumpkin is fully cooked and the yogurt has thickened, remove from heat.
- Serve the Kaddo Bourani hot, with naan or rice on the side.
