Ingredients

  • 2 lbs pumpkin, peeled and cut into cubes
  • 1 cup plain yogurt
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the pumpkin cubes to the skillet and cook for 5 minutes, stirring occasionally.
  4. Stir in the tomato sauce, turmeric, cinnamon, and cardamom. Season with salt and pepper.
  5. Cover the skillet and let the pumpkin simmer for 20-25 minutes, or until tender.
  6. In a separate bowl, whisk the yogurt until smooth.
  7. Spread the yogurt over the cooked pumpkin in the skillet.
  8. Cover and cook for an additional 10 minutes.
  9. Once the pumpkin is fully cooked and the yogurt has thickened, remove from heat.
  10. Serve the Kaddo Bourani hot, with naan or rice on the side.
