Ingredients

  • 2 lbs pumpkin, peeled and cut into chunks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup plain yogurt
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • 2 tbsp vegetable oil
  • 1/4 cup water
  • 2 tbsp dried mint

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
  2. Add the minced garlic, ground turmeric, ground cinnamon, ground cardamom, and cayenne pepper to the pot. Stir well and cook for 2 minutes.
  3. Add the pumpkin chunks to the pot and stir to coat them with the onion and spice mixture.
  4. Pour in the tomato sauce and water, then season with salt. Stir gently, cover the pot, and let the stew simmer for 30-35 minutes, or until the pumpkin is tender.
  5. While the pumpkin is cooking, prepare the yogurt sauce by mixing the plain yogurt with minced garlic and a pinch of salt.
  6. Once the pumpkin is tender, transfer the stew to a serving dish. Top with the garlic yogurt sauce and sprinkle with dried mint.
