Kaddo Bourani (pumpkin And Yogurt Stew)
Kaddo Bourani is a traditional Afghan dish that features tender chunks of pumpkin stewed in a savory tomato-based sauce, topped with a creamy garlic yogurt sauce and a sprinkle of dried mint. This dish is bursting with flavor and is perfect for a cozy family dinner or a special occasion.
Ingredients
- 2 lbs pumpkin, peeled and cut into chunks
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup plain yogurt
- 1/2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp cayenne pepper
- Salt to taste
- 2 tbsp vegetable oil
- 1/4 cup water
- 2 tbsp dried mint
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
- Add the minced garlic, ground turmeric, ground cinnamon, ground cardamom, and cayenne pepper to the pot. Stir well and cook for 2 minutes.
- Add the pumpkin chunks to the pot and stir to coat them with the onion and spice mixture.
- Pour in the tomato sauce and water, then season with salt. Stir gently, cover the pot, and let the stew simmer for 30-35 minutes, or until the pumpkin is tender.
- While the pumpkin is cooking, prepare the yogurt sauce by mixing the plain yogurt with minced garlic and a pinch of salt.
- Once the pumpkin is tender, transfer the stew to a serving dish. Top with the garlic yogurt sauce and sprinkle with dried mint.
