Kaddo Bourani (spiced Pumpkin Curry)
Kaddo Bourani is a traditional Afghan dish that features tender chunks of pumpkin cooked in a flavorful tomato-based sauce. This spiced pumpkin curry is a popular Pashtun Cuisine dish that is perfect for a comforting and hearty meal.
Ingredients
- 2 lbs pumpkin, peeled and cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 cup tomato puree
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- Salt to taste
- 2 tbsp vegetable oil
- 1 cup plain yogurt
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground turmeric, ground coriander, ground cumin, and cayenne pepper to the pot. Cook for 2 minutes, stirring constantly.
- Pour in the tomato puree and stir well to combine with the spices and onions.
- Add the pumpkin chunks to the pot and stir to coat them with the tomato mixture.
- Season with salt, then cover the pot and let the curry simmer for 45-50 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked, remove the pot from the heat and let it cool slightly.
- Serve the spiced pumpkin curry with a dollop of plain yogurt on top and a sprinkle of fresh cilantro for garnish.
