Kaddo Bourani (spiced Pumpkin Curry)

Ingredients

  • 2 lbs pumpkin, peeled and cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup tomato puree
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • 2 tbsp vegetable oil
  • 1 cup plain yogurt
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, ground turmeric, ground coriander, ground cumin, and cayenne pepper to the pot. Cook for 2 minutes, stirring constantly.
  3. Pour in the tomato puree and stir well to combine with the spices and onions.
  4. Add the pumpkin chunks to the pot and stir to coat them with the tomato mixture.
  5. Season with salt, then cover the pot and let the curry simmer for 45-50 minutes, or until the pumpkin is tender.
  6. Once the pumpkin is cooked, remove the pot from the heat and let it cool slightly.
  7. Serve the spiced pumpkin curry with a dollop of plain yogurt on top and a sprinkle of fresh cilantro for garnish.
