Kaddu Chorba (uyghur Pumpkin Soup)
Kaddu Chorba, also known as Uyghur Pumpkin Soup, is a traditional dish from Xinjiang (Uyghur) Cuisine. This hearty and flavorful soup is perfect for the colder months and is packed with warming spices and nutritious ingredients.
Ingredients
- 1 small pumpkin, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp ground turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the ground cumin, ground cinnamon, and ground turmeric, and cook for 1-2 minutes until fragrant.
- Add the cubed pumpkin and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the pumpkin is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Season the soup with salt and pepper to taste.
- Serve the Kaddu Chorba hot, garnished with a sprinkle of ground cumin or a dollop of yogurt if desired.
