Kaddu Chorba, also known as Uyghur Pumpkin Soup, is a traditional dish from Xinjiang (Uyghur) Cuisine. This hearty and flavorful soup is perfect for the colder months and is packed with warming spices and nutritious ingredients.

Kaddu Chorba (uyghur Pumpkin Soup)

Ingredients

  • 1 small pumpkin, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the ground cumin, ground cinnamon, and ground turmeric, and cook for 1-2 minutes until fragrant.
  4. Add the cubed pumpkin and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the pumpkin is tender.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  6. Season the soup with salt and pepper to taste.
  7. Serve the Kaddu Chorba hot, garnished with a sprinkle of ground cumin or a dollop of yogurt if desired.
