Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup coconut oil
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, combine the mashed bananas, coconut oil, brown sugar, and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Gently fold in the shredded coconut.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
