Kadu (coconut Cream Pie)

Ingredients
- 1 9-inch pie crust
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups coconut milk
- 2 cups whole milk
- 4 egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
Instructions
- In a saucepan, combine sugar, flour, and salt. Gradually stir in coconut milk and whole milk.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- Remove from heat. In a small bowl, beat egg yolks slightly. Gradually stir about 1 cup of the hot mixture into the egg yolks.
- Return all to the saucepan and bring to a gentle boil. Cook and stir for 2 minutes.
- Remove from heat and stir in butter and vanilla extract until smooth.
- Stir in 3/4 cup of shredded coconut. Pour into the baked pie crust.
- Cool to room temperature, then refrigerate for at least 3 hours.
- Before serving, top with whipped cream and sprinkle with the remaining shredded coconut.
