Ingredients

  • 1 9-inch pie crust
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups coconut milk
  • 2 cups whole milk
  • 4 egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut

Instructions

  1. In a saucepan, combine sugar, flour, and salt. Gradually stir in coconut milk and whole milk.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  3. Remove from heat. In a small bowl, beat egg yolks slightly. Gradually stir about 1 cup of the hot mixture into the egg yolks.
  4. Return all to the saucepan and bring to a gentle boil. Cook and stir for 2 minutes.
  5. Remove from heat and stir in butter and vanilla extract until smooth.
  6. Stir in 3/4 cup of shredded coconut. Pour into the baked pie crust.
  7. Cool to room temperature, then refrigerate for at least 3 hours.
  8. Before serving, top with whipped cream and sprinkle with the remaining shredded coconut.
