Kadu (coconut Lime Bars)
Kadu, also known as Coconut Lime Bars, is a popular dessert in Marshallese cuisine. These delicious bars are made with a combination of coconut and lime, creating a refreshing and tropical flavor.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsweetened shredded coconut
- 1/2 cup melted butter
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup fresh lime juice
- 2 teaspoons lime zest
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
- In a bowl, combine the graham cracker crumbs, shredded coconut, and melted butter. Press the mixture into the bottom of the prepared baking pan.
- In another bowl, whisk together the sweetened condensed milk, lime juice, lime zest, and salt. Pour the mixture over the crust.
- Bake for 25 minutes, or until the edges are golden brown and the center is set.
- Allow the bars to cool completely in the pan before slicing into squares. Refrigerate for at least 1 hour before serving.
