Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup melted butter
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lime juice
  • 2 teaspoons lime zest
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a bowl, combine the graham cracker crumbs, shredded coconut, and melted butter. Press the mixture into the bottom of the prepared baking pan.
  3. In another bowl, whisk together the sweetened condensed milk, lime juice, lime zest, and salt. Pour the mixture over the crust.
  4. Bake for 25 minutes, or until the edges are golden brown and the center is set.
  5. Allow the bars to cool completely in the pan before slicing into squares. Refrigerate for at least 1 hour before serving.
