Kadumbuttu (spicy Pandi Curry)

Ingredients

  • 2 cups rice flour
  • 3 cups water
  • 1 lb pork, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 4-5 green chilies, slit
  • 1-inch ginger, grated
  • 4-5 garlic cloves, minced
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1 sprig curry leaves
  • Salt to taste
  • Oil for cooking

Instructions

  1. In a large bowl, mix the rice flour with water to form a smooth dough.
  2. Divide the dough into small portions and shape them into round dumplings.
  3. Steam the rice dumplings in a steamer for 20-25 minutes until cooked through.
  4. In a separate pan, heat oil and add mustard seeds and cumin seeds. Once they splutter, add chopped onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
  5. Add the pork cubes and cook until they are browned on all sides.
  6. Stir in the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook for a few minutes.
  7. Pour in water, cover the pan, and let the pork curry simmer for 30-40 minutes until the meat is tender and the flavors are well combined.
  8. Finally, add curry leaves and cook for an additional 5 minutes.
  9. Serve the steamed rice dumplings with the spicy pork curry.
