Kadumbuttu (spicy Pandi Curry)
Kadumbuttu (Spicy Pandi Curry) is a traditional dish from Kodava Cuisine, known for its bold flavors and aromatic spices. This dish features steamed rice dumplings served with a spicy pork curry, making it a hearty and satisfying meal.
Ingredients
- 2 cups rice flour
- 3 cups water
- 1 lb pork, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 4-5 green chilies, slit
- 1-inch ginger, grated
- 4-5 garlic cloves, minced
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1 sprig curry leaves
- Salt to taste
- Oil for cooking
Instructions
- In a large bowl, mix the rice flour with water to form a smooth dough.
- Divide the dough into small portions and shape them into round dumplings.
- Steam the rice dumplings in a steamer for 20-25 minutes until cooked through.
- In a separate pan, heat oil and add mustard seeds and cumin seeds. Once they splutter, add chopped onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
- Add the pork cubes and cook until they are browned on all sides.
- Stir in the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook for a few minutes.
- Pour in water, cover the pan, and let the pork curry simmer for 30-40 minutes until the meat is tender and the flavors are well combined.
- Finally, add curry leaves and cook for an additional 5 minutes.
- Serve the steamed rice dumplings with the spicy pork curry.
