Ingredients
- 1 lb beef, thinly sliced
- 2 tbsp red curry paste
- 1 can (14 oz) coconut milk
- 1 red bell pepper, sliced

- 1 cup bamboo shoots
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1 cup Thai basil leaves
Instructions
- In a pot, heat the coconut milk over medium heat.
- Add the red curry paste and stir until fragrant.
- Add the beef and cook until it is no longer pink.
- Stir in the fish sauce and sugar.
- Add the bell pepper, onion, and bamboo shoots. Simmer for 10 minutes.
- Stir in the Thai basil leaves and remove from heat.
