Ingredients
- 500g fresh paua, sliced
- 300g mixed seafood (such as prawns, mussels, and fish)
- 2 Tbsp vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 Tbsp ginger, grated
- 2 Tbsp curry powder
- 1 can (400ml) coconut milk
- 1 cup fish or vegetable stock
- 2 Tbsp fish sauce
- 2 Tbsp brown sugar
- Salt and pepper to taste
- Fresh coriander leaves for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger, and cook until softened.
- Add the curry powder and cook for 1-2 minutes until fragrant.
- Stir in the coconut milk, fish or vegetable stock, fish sauce, and brown sugar. Bring to a simmer.
- Add the paua and mixed seafood to the pot, and simmer for 15-20 minutes until the seafood is cooked through.
- Season with salt and pepper to taste.
- Serve the Kai Moana Kari hot, garnished with fresh coriander leaves, and accompanied by steamed rice or crusty bread.
