Ingredients

  • 500g fresh paua, sliced
  • 300g mixed seafood (such as prawns, mussels, and fish)
  • 2 Tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 Tbsp ginger, grated
  • 2 Tbsp curry powder
  • 1 can (400ml) coconut milk
  • 1 cup fish or vegetable stock
  • 2 Tbsp fish sauce
  • 2 Tbsp brown sugar
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger, and cook until softened.
  2. Add the curry powder and cook for 1-2 minutes until fragrant.
  3. Stir in the coconut milk, fish or vegetable stock, fish sauce, and brown sugar. Bring to a simmer.
  4. Add the paua and mixed seafood to the pot, and simmer for 15-20 minutes until the seafood is cooked through.
  5. Season with salt and pepper to taste.
  6. Serve the Kai Moana Kari hot, garnished with fresh coriander leaves, and accompanied by steamed rice or crusty bread.
