Ingredients

  • 4 eggs, separated

  • 1/4 cup raisins (optional)

  • Fruit compote or whipped cream, for serving

Instructions

  1. In a large bowl, whisk together the egg yolks and sugar until pale and creamy.
  2. Gradually add the flour and milk, and mix until smooth.
  3. In a separate bowl, beat the egg whites until stiff peaks form.
  4. Gently fold the beaten egg whites into the batter until just combined.
  5. Heat the butter in a large non-stick skillet over medium heat.
  6. Pour the batter into the skillet and sprinkle with raisins, if using.
  7. Cook for 3-4 minutes, or until the bottom is golden brown.
  8. Flip the pancake and cook for an additional 3-4 minutes, or until the other side is golden brown.
  9. Tear the pancake into small pieces using two forks while it's still in the skillet.
  10. Sprinkle with powdered sugar and continue to cook for another 2-3 minutes, stirring occasionally, until the sugar caramelizes and the pancake is cooked through.
  11. Transfer to a serving plate and serve with fruit compote or whipped cream.
