Ingredients
- 4 eggs, separated
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 1 cup milk
- 1/4 cup unsalted butter
- 1/4 cup raisins (optional)
- Powdered sugar, for dusting
- Fruit compote or whipped cream, for serving
Instructions
- In a large bowl, whisk together the egg yolks and sugar until pale and creamy.
- Gradually add the flour and milk, and mix until smooth.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the batter until just combined.
- Heat the butter in a large non-stick skillet over medium heat.
- Pour the batter into the skillet and sprinkle with raisins, if using.
- Cook for 3-4 minutes, or until the bottom is golden brown.
- Flip the pancake and cook for an additional 3-4 minutes, or until the other side is golden brown.
- Tear the pancake into small pieces using two forks while it's still in the skillet.
- Sprinkle with powdered sugar and continue to cook for another 2-3 minutes, stirring occasionally, until the sugar caramelizes and the pancake is cooked through.
- Transfer to a serving plate and serve with fruit compote or whipped cream.
