Ingredients
- 2 lbs ripe apricots, pitted and chopped
- 2 cups granulated sugar
- 1/4 cup lemon juice
Instructions
- In a large pot, combine the chopped apricots, sugar, and lemon juice.
- Place the pot over medium heat and bring the mixture to a boil, stirring occasionally.
- Reduce the heat to low and simmer the jam for 45-60 minutes, or until it reaches the desired thickness, stirring occasionally.
- Remove the pot from the heat and let the jam cool to room temperature.
- Transfer the jam to sterilized jars and store in the refrigerator.
