Ingredients

  • 1 cup raw cashews
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 green chilies, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 cup coconut milk
  • 2 tablespoons ghee or oil
  • Fresh cilantro for garnish
  • Salt to taste

Instructions

  1. Soak the cashews in warm water for 15 minutes, then blend them into a smooth paste.
  2. Heat ghee or oil in a pan, add cumin seeds, and sauté until they splutter.
  3. Add chopped onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown.
  4. Add chopped tomatoes and cook until they turn mushy.
  5. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.
  6. Pour in the cashew paste and coconut milk. Stir well and simmer for 5-7 minutes.
  7. Sprinkle garam masala and garnish with fresh cilantro.
  8. Serve the creamy cashew curry hot with steamed rice or naan.
