Ingredients
- 1 cup raw cashews
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 4 garlic cloves, minced
- 1-inch ginger, grated
- 2 green chilies, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1/2 cup coconut milk
- 2 tablespoons ghee or oil
- Fresh cilantro for garnish
- Salt to taste
Instructions
- Soak the cashews in warm water for 15 minutes, then blend them into a smooth paste.
- Heat ghee or oil in a pan, add cumin seeds, and sauté until they splutter.
- Add chopped onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown.
- Add chopped tomatoes and cook until they turn mushy.
- Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.
- Pour in the cashew paste and coconut milk. Stir well and simmer for 5-7 minutes.
- Sprinkle garam masala and garnish with fresh cilantro.
- Serve the creamy cashew curry hot with steamed rice or naan.
