Kaju Kothimbir Vada (काजू कोथिंबीर वडा)

Ingredients

  • 1 cup cashews, coarsely ground
  • 1 cup fresh coriander leaves, finely chopped
  • 1/2 cup chickpea flour (besan)
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tsp ginger paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • Salt to taste
  • Oil for frying

Instructions

  1. In a large mixing bowl, combine the coarsely ground cashews, chopped coriander leaves, chickpea flour, chopped onion, green chilies, ginger paste, turmeric powder, cumin seeds, and salt. Mix well to form a thick batter.
  2. Heat oil in a deep frying pan over medium heat.
  3. Take a small portion of the batter and shape it into a round vada. Gently slide it into the hot oil.
  4. Fry the vadas in batches until they turn golden brown and crispy. Remove from the oil and drain on a paper towel.
  5. Serve the Kaju Kothimbir Vadas hot with chutney or ketchup.
