Ingredients
- 1 cup cashews
- 1 cup grated coconut
- 1 onion, finely chopped
- 1 tomato, chopped
- 1-inch ginger, grated
- 3-4 garlic cloves, minced
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 cup heavy cream
- 2 tbsp ghee (clarified butter)
- Fresh cilantro leaves for garnish
- Salt to taste
Instructions
- In a blender, combine cashews and grated coconut with a little water to make a smooth paste.
- Heat ghee in a pan and add cumin seeds. Once they splutter, add chopped onions, ginger, and garlic. Sauté until the onions turn golden brown.
- Add the chopped tomatoes and cook until they turn soft.
- Stir in the cashew-coconut paste, garam masala, turmeric powder, red chili powder, and salt. Cook for a few minutes.
- Pour in the heavy cream and simmer the curry for 5-7 minutes, stirring occasionally.
- Garnish with fresh cilantro leaves before serving.
