Kakabona (fisherman's Feast)
Kakabona, also known as Fisherman's Feast, is a traditional dish from the Solomon Islands that celebrates the abundance of fresh seafood in the region. This flavorful and aromatic dish is a favorite among locals and visitors alike.
Ingredients
- 4 fish fillets (such as snapper or mahi-mahi)
- 1 onion, sliced
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 1 cup coconut milk
- 2 tablespoons lemon juice
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Season the fish fillets with salt, pepper, and lemon juice. Let them marinate for 10 minutes.
- In a large pan, heat the coconut milk over medium heat. Add the onion, garlic, and ginger, and cook for 5 minutes.
- Add the marinated fish fillets, tomatoes, and bell pepper to the pan. Pour in the soy sauce and simmer for 15-20 minutes, or until the fish is cooked through.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Kakabona hot with steamed rice or boiled cassava.
