Ingredients

  • 4 fish fillets (such as snapper or mahi-mahi)
  • 1 onion, sliced
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 1 cup coconut milk
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Season the fish fillets with salt, pepper, and lemon juice. Let them marinate for 10 minutes.
  2. In a large pan, heat the coconut milk over medium heat. Add the onion, garlic, and ginger, and cook for 5 minutes.
  3. Add the marinated fish fillets, tomatoes, and bell pepper to the pan. Pour in the soy sauce and simmer for 15-20 minutes, or until the fish is cooked through.
  4. Adjust the seasoning with salt and pepper, if needed.
  5. Serve the Kakabona hot with steamed rice or boiled cassava.
