Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are soft, about 5 minutes.
  3. Stir in the curry powder, turmeric, cumin, and paprika. Cook for another 2 minutes to toast the spices.
  4. Pour in the coconut milk and stir to combine with the spices and vegetables.
  5. Add the drained and rinsed chickpeas to the pot. Season with salt and pepper, then bring the mixture to a simmer.
  6. Let the curry simmer for 15-20 minutes, stirring occasionally, until the sauce has thickened slightly.
  7. Adjust seasoning if needed and serve the coconut curry chickpeas over cooked rice or with naan bread. Garnish with fresh cilantro.
