Kakake, also known as Coconut Curry Chickpeas, is a popular dish in Solomon Islands cuisine. This flavorful and aromatic curry is made with creamy coconut milk, hearty chickpeas, and a blend of spices that create a delicious and satisfying meal.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are soft, about 5 minutes.
- Stir in the curry powder, turmeric, cumin, and paprika. Cook for another 2 minutes to toast the spices.
- Pour in the coconut milk and stir to combine with the spices and vegetables.
- Add the drained and rinsed chickpeas to the pot. Season with salt and pepper, then bring the mixture to a simmer.
- Let the curry simmer for 15-20 minutes, stirring occasionally, until the sauce has thickened slightly.
- Adjust seasoning if needed and serve the coconut curry chickpeas over cooked rice or with naan bread. Garnish with fresh cilantro.
