Kakake (coconut Curry Lentils)
Kakake, also known as Coconut Curry Lentils, is a traditional dish from the Solomon Islands that is both hearty and flavorful. This dish is perfect for a cozy night in or for entertaining guests with its rich and aromatic flavors.
Ingredients
- 1 cup red lentils
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 2 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp coconut oil
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the coconut oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the curry powder, turmeric, cumin, and paprika to the pot, stirring constantly for 1-2 minutes until fragrant.
- Pour in the coconut milk and vegetable broth, then add the rinsed lentils. Stir to combine and bring to a gentle boil.
- Reduce the heat to low, cover the pot, and let the lentils simmer for 20-25 minutes, or until they are tender and the liquid has thickened.
- Season with salt and pepper to taste.
- Serve the Kakake hot, garnished with fresh cilantro.
