Ingredients

  • 1 cup red lentils
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp coconut oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the coconut oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the curry powder, turmeric, cumin, and paprika to the pot, stirring constantly for 1-2 minutes until fragrant.
  4. Pour in the coconut milk and vegetable broth, then add the rinsed lentils. Stir to combine and bring to a gentle boil.
  5. Reduce the heat to low, cover the pot, and let the lentils simmer for 20-25 minutes, or until they are tender and the liquid has thickened.
  6. Season with salt and pepper to taste.
  7. Serve the Kakake hot, garnished with fresh cilantro.
