Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 cups coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cups cooked rice, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Stir in the curry powder, turmeric, cumin, paprika, salt, and black pepper.
  5. Pour in the coconut milk and add the sliced red bell pepper.
  6. Simmer for 30 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
  7. Serve the Kakake over cooked rice and enjoy!
