Kakake (coconut Curry Paradise)
Kakake, also known as Coconut Curry Paradise, is a traditional dish from the Solomon Islands that is bursting with flavor and rich in cultural heritage.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 2 cups cooked rice, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the curry powder, turmeric, cumin, paprika, salt, and black pepper.
- Pour in the coconut milk and add the sliced red bell pepper.
- Simmer for 30 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
- Serve the Kakake over cooked rice and enjoy!
