Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 2 cups ripe papaya, diced
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1 tablespoon cornstarch
  • 1/4 teaspoon lime zest

Instructions

  1. In a food processor, combine the flour, butter, powdered sugar, and salt. Pulse until the mixture resembles coarse crumbs.
  2. Press the mixture into a tart pan and chill for 30 minutes.
  3. Preheat the oven to 350°F (175°C).
  4. Bake the tart crust for 15-20 minutes, or until golden brown. Let it cool.
  5. In a saucepan, combine the papaya, granulated sugar, lime juice, and cornstarch. Cook over medium heat until the mixture thickens.
  6. Stir in the lime zest and let the filling cool slightly.
  7. Pour the papaya filling into the tart crust and refrigerate for at least 2 hours before serving.
