Kakarakaya Vepudu (Bitter Gourd Stir-fry)

Ingredients

  • 2 medium bitter gourds, thinly sliced
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2-3 dry red chilies
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds and dry red chilies.
  2. Add the thinly sliced bitter gourd and sauté for 2-3 minutes.
  3. Stir in turmeric powder, red chili powder, and salt. Cook for another 10-12 minutes until the bitter gourd is tender and slightly crispy.
  4. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
