Kakaruk (marshallese Style Chicken Satay)

Ingredients

  • 1.5 lbs chicken thighs, cut into chunks
  • 1 cup coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine coconut milk, soy sauce, brown sugar, garlic, turmeric, coriander, cumin, cayenne pepper, salt, and pepper. Mix well to create the marinade.
  2. Add the chicken chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
  4. Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  5. Remove from the grill and let the chicken rest for a few minutes before serving.
