Kakaruk (marshallese Style Chicken Satay)
Kakaruk is a traditional Marshallese dish featuring tender chicken marinated in a flavorful blend of spices and coconut milk, then grilled to perfection. This dish is perfect for a family gathering or a casual weeknight dinner.
Ingredients
- 1.5 lbs chicken thighs, cut into chunks
- 1 cup coconut milk
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- In a bowl, combine coconut milk, soy sauce, brown sugar, garlic, turmeric, coriander, cumin, cayenne pepper, salt, and pepper. Mix well to create the marinade.
- Add the chicken chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
- Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Remove from the grill and let the chicken rest for a few minutes before serving.
