Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1 cup coconut milk
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the coconut milk, garlic, ginger, soy sauce, brown sugar, black pepper, salt, and vegetable oil to make the marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
