Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 cup coconut milk
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the coconut milk, garlic, ginger, soy sauce, brown sugar, black pepper, salt, and vegetable oil to make the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
