Ingredients
- 1 whole chicken, cut into pieces
- 2 cups coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 cup green beans, trimmed
- 1 cup pumpkin, cubed
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the coconut milk over medium heat.
- Add the chicken pieces, onion, and garlic. Cook until the chicken is no longer pink.
- Stir in the tomatoes, green beans, and pumpkin. Cook for 5 minutes.
- Pour in the chicken broth and bring the soup to a boil. Reduce heat and let it simmer for 15-20 minutes.
