Kakaruk (marshallese Style Coconut Shrimp Stir-fry)

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup coconut milk
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 2 tbsp soy sauce
  • 1 tsp ginger, grated
  • 1 tsp chili flakes
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large wok or skillet, heat the vegetable oil over medium-high heat.
  2. Add the sliced onion and minced garlic, and sauté until fragrant.
  3. Add the shrimp to the wok and cook until they turn pink and opaque.
  4. Pour in the coconut milk, soy sauce, grated ginger, and chili flakes. Stir to combine.
  5. Add the bell pepper and snap peas, and stir-fry for a few minutes until the vegetables are tender-crisp.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve the Kakaruk hot over steamed rice.
