Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 cup coconut milk
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup snap peas
- 2 tbsp soy sauce
- 1 tsp ginger, grated
- 1 tsp chili flakes
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large wok or skillet, heat the vegetable oil over medium-high heat.
- Add the sliced onion and minced garlic, and sauté until fragrant.
- Add the shrimp to the wok and cook until they turn pink and opaque.
- Pour in the coconut milk, soy sauce, grated ginger, and chili flakes. Stir to combine.
- Add the bell pepper and snap peas, and stir-fry for a few minutes until the vegetables are tender-crisp.
- Season with salt and pepper to taste.
- Remove from heat and serve the Kakaruk hot over steamed rice.
