Ingredients

  • 1 coconut crab, cleaned and cut into pieces
  • 2 cups coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • 2 tablespoons coconut oil
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add curry powder, turmeric, cumin, and coriander, stir for 1-2 minutes.
  4. Add coconut crab pieces, coat with the spice mixture.
  5. Pour in coconut milk, season with salt and pepper, and bring to a simmer.
  6. Cover and cook for 45-50 minutes, stirring occasionally, until the crab is cooked through and the sauce has thickened.
  7. Garnish with fresh cilantro and serve hot with steamed rice.
