Kak'ik Turkey (Pavo Kak'ik)
Pavo Kak'ik is a traditional Guatemalan dish that is often prepared during special occasions such as Christmas. This flavorful turkey soup is known for its rich, spicy broth and is a staple in Mayan cuisine.
Ingredients
- 1 whole turkey, cut into pieces
- 10 cups water
- 6 tomatoes, chopped
- 4 cloves garlic, minced
- 2 onions, chopped
- 4 guajillo chilies, seeded and deveined
- 2 tbsp achiote paste
- 1 tsp dried oregano
- Salt to taste
- 6 fresh mint leaves
- 6 sprigs of cilantro
- 6 small radishes, thinly sliced
- 6 small corn tortillas
Instructions
- In a large pot, combine the turkey pieces and water. Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the turkey from the pot and set aside. Strain the broth and return it to the pot.
- In a blender, combine the tomatoes, garlic, onions, guajillo chilies, achiote paste, and oregano. Blend until smooth.
- Pour the tomato mixture into the pot with the broth. Add the cooked turkey pieces and simmer for another 30 minutes.
- Season with salt to taste.
- Before serving, add a mint leaf and a sprig of cilantro to each bowl. Garnish with sliced radishes and serve with warm corn tortillas.
