Ingredients

  • 4 large squid, cleaned and tentacles reserved
  • 1 cup basmati rice, rinsed and drained
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup fresh parsley, chopped
  • 2 cups fish or vegetable broth
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, and cayenne pepper to the skillet. Cook for 1-2 minutes until fragrant.
  3. Stir in the rinsed rice and cook for another 2 minutes, then pour in the fish or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  4. Meanwhile, prepare the squid by stuffing each one with the cooked spiced rice mixture and securing the openings with toothpicks.
  5. Heat the remaining olive oil in a large pan over medium heat. Add the diced tomatoes and cook for 5 minutes until they start to soften.
  6. Add the crushed tomatoes, reserved squid tentacles, and season with salt and pepper. Simmer for 10 minutes to allow the flavors to meld.
  7. Gently place the stuffed squid in the tomato sauce, cover, and simmer for 15-20 minutes until the squid is tender.
  8. Once cooked, remove the toothpicks from the squid and serve hot, garnished with chopped parsley.
